    Dear Editor,

    I came across Emily Pope’s article on farmer’s markets being ‘incubators’ for entrepreneurs, and wanted to share a relevant story. Kavita Shukla, inventor and founder of Fenugreen FreshPaper, started out 3 years ago in her local farmer’s market with only $300, selling hand-made batches of her product. Today, her business is recognized as one of the pioneers in the movement to reduce food waste, and retails in Whole Foods, Bed Bath & Beyond, and Ace Hardware. She is an excellent (and local!) example of how a business can go from a farmer’s market stall to some of our nation’s biggest retailers. Also, she is now I finalist to win a $4 million prize (an all expenses paid Super Bowl ad from QuickBooks), giving her a tremendous opportunity to share her vision for a better food system with over 100 million viewers.
